Şakşuka
Fried aubergine and courgette under a garlicky tomato sauce, served cold. Nothing to do with the egg dish of a similar name.

Method

Toss the diced aubergine with the drawing salt and leave 20 minutes, then rinse and pat completely dry.

Heat the olive oil in a wide pan and fry the aubergine in two batches for 6 minutes each, until deep gold. Drain on paper.

Fry the courgette for 4 minutes and drain on paper.

Fry the green pepper for 3 minutes and drain.

Pour off all but 2 tbsp of the oil.

Fry the garlic for 30 seconds, then add the tomato purée and cook 1 minute.

Add the tomatoes, pepper flakes, sugar and salt and simmer 12 minutes, until thick.

Arrange the fried vegetables on a serving plate and spoon the sauce over.

Cool to room temperature, at least 1 hour.

Scatter the parsley over and serve with yoghurt if you like.
