San Choy Bow
Pork mince stir-fried with water chestnuts, mushrooms and hoisin, spooned into crisp lettuce cups and topped with crunchy noodles. A Cantonese classic.

Stir the hoisin, oyster sauce, soy sauce, sesame oil and rice vinegar together in a small bowl.

Heat the oil in a wok or large frying pan over high heat. Add the pork and cook for 5 minutes, breaking it up with a spoon, until it is browned and any liquid has cooked off.

Add the garlic, ginger and the white parts of the spring onions and stir-fry for 1 minute. Add the mushrooms and carrot and cook for 3 minutes, until the mushrooms have softened.

Stir in the water chestnuts and the sauce and cook for 2 minutes, until glossy and the sauce has been absorbed. Taste and adjust.

Spoon the filling into the lettuce cups. Top with the green spring onion, crispy noodles, chilli and coriander, and serve straight away.
