The Short Version
Savarin is a yeast cake meant to be soaked, and everything about the recipe follows from that. The batter is closer to a thick batter than a dough, enriched with butter and eggs, and it bakes into a light, open crumb that drinks up syrup like a sponge.
The cake is baked in a ring mould, and it is the soaking that makes it. Make the syrup from sugar, water and orange zest, add the rum off the heat, and spoon it over the warm cake in stages until it is heavy but not collapsing. Pour the syrup over the cake while it is still warm, because a cold cake does not drink as much. Turn it onto a plate and keep spooning the syrup over for 15 minutes.
Before serving, brush with warm apricot jam for gloss and fill the centre with whipped cream and fruit, such as strawberries, raspberries or sliced peaches. It is a dessert for the day it is made. Leave out the rum and use orange juice for a version everyone can eat.
