  2. Keep the oil near 170°C / 340°F.
  3. Warm the honey so it runs over the pastry.

Good to Know About Seadas

Flour, lard, water, cheese, honey: five things, and a dessert that tastes of salt and sweetness at once. Seadas are Sardinian pastries filled with young pecorino, fried and drizzled with honey, and they are eaten at the end of a meal or at festivals.

The dough is firm and plain, made with flour, a little lard, water and salt. Rest it for 20 minutes, then roll it thin. Put a slice or a spoonful of mild, fresh cheese in the middle, cover it with a second disc and press the edges well to seal. A leaking seal will let the cheese escape into the oil, so crimp it with a fork, and trim with a cutter.

Fry in hot oil for about 2 minutes a side until golden and puffed, and drain. Pour over the honey, which is traditionally bitter, such as strawberry tree or chestnut, but any dark honey will do. Eat them while the cheese is soft and stretchy.
