What Can Go Wrong

Changing the Recipe
- Out of spring onions? A small regular onion, finely sliced, or a few chives stirred in at the end both cover the job.
About This Recipe
Thick noodles, a hot wok and a dark, sweet sauce: that is the Shanghai way, and it is one of the few noodle dishes that tastes better when the noodles are a little chewy and well coloured. The noodles used are round, thick and made from wheat flour, close to udon. Fresh udon from the chilled aisle is the easiest substitute.
Boil the noodles for 2 minutes only, then drain and toss with a little oil so they do not stick. They will cook through in the wok. Overcooked noodles break up and turn gluey when stir-fried.
The sauce is a mixture of light soy, dark soy for colour, oyster sauce and sugar, with a splash of Shaoxing wine. The dark soy is what gives the noodles their mahogany colour. Mix it in a small bowl so it goes in all at once.
Cook the pork first until just coloured, then the cabbage and shiitake. Add the noodles and sauce and toss for 3 minutes, until every strand is glossy and brown. Finish with spring onions.
