Heat the oven to 190°C / 375°F (170°C / 340°F fan). Grease a 23 x 33 cm baking dish.

Bring a large pan of salted water to the boil. Add the squash and onion and cook for 6 minutes, until tender. Drain in a colander and press with the back of a spoon to squeeze out as much water as you can.

In a large bowl, mix the egg, soured cream, 200 g cheddar, 1 teaspoon of salt, pepper and cayenne. Fold in the drained squash and onion and spread the mixture in the dish.
