What Can Go Wrong
- Add the milk gradually so the batter is lump-free.
- Make the first pancake a test; adjust the heat as needed.
- Keep cooked pancakes warm in a low oven.
Ingredient Swaps
- In a sauce, full-fat crème fraîche can usually take the place of the double cream; single cream is thinner and more likely to split if it boils, so keep it below a simmer.
About This Recipe
Sunday lunch in a Swedish household used to end with these, and they suit any slow weekend morning: thin, golden pancakes, spread with jam and rolled up, with cream on the side. They are closer to a crêpe than to the thick American kind. Think thin.
The batter is mostly milk, so it is thin enough to spread to the edges of the pan in a quick swirl. Whisk the flour with the eggs and a little milk first to a smooth paste, then add the rest of the milk slowly. This stops lumps. Let the batter rest for 10 minutes, which lets the flour swell and gives a tender pancake that does not tear when turned.
Use a medium-hot pan with a little butter. Pour in a ladle of batter, tip the pan to coat, and cook for about a minute each side until golden with lacy brown edges. Stack the pancakes on a warm plate and serve with lingonberry jam, sugar or whipped cream.
