How to Make Nalysnyky

  1. Whisk the eggs, milk, tablespoon of sugar, salt and melted butter in a bowl, then whisk in the flour until the batter is smooth. Rest it for 30 minutes.

  2. Mash the cheese with the egg yolk, 2 tbsp sugar, vanilla, lemon zest and sour cream until creamy but still a little textured.

  3. Heat a 20 cm non-stick frying pan over medium heat and brush lightly with butter.

  4. Pour in about 60 ml of batter, swirling to coat the base, and cook for 1 minute, until the top looks dry and the edges lift. Turn and cook for 20 seconds. Stack the crepes on a plate, making about 14.

  5. Spoon 2 tbsp of filling onto the centre of each crepe, fold in the sides, and roll it up into a parcel.

  6. Melt a tablespoon of butter in the pan and fry the parcels, seam side down, for 2 minutes on each side, until golden.

  7. Serve hot with sour cream and jam.
