  1. Bring the water to the boil in a small pan. Add the tea, lower the heat and simmer for 4 minutes, until the tea is very dark and strong.

  2. Strain the tea through a fine sieve into a heatproof jug.

  3. Stir in the condensed milk and evaporated milk until dissolved. Taste, and add more condensed milk if you want it sweeter.

  4. Take a second jug. Standing over the sink, pour the tea from one jug into the other, starting with a short pour, and raise the top jug a little each time, up to about 40 cm, in a steady stream.

  5. Repeat 6 to 8 times, until the tea is frothy and a little cooler. Pour into two glasses and drink while hot.
