Method

  1. Heat the oil in a large pot over medium heat. Cook the onion for 6 minutes, until soft. Add the garlic and cook for 1 minute.

  2. Add the squash, tomatoes, stock, sage, thyme, maple syrup, salt and pepper. Bring to a boil, then reduce the heat, cover and simmer for 15 minutes, until the squash is nearly tender.

  3. Add the beans and sweetcorn and simmer, uncovered, for 15 minutes.

  4. Mash a few pieces of squash against the side of the pot with the back of a spoon to thicken the broth. Simmer for 5 minutes more.

  5. Taste and adjust the seasoning. Serve hot, scattered with the parsley.

  • Cut the squash into 2 cm cubes. Smaller pieces fall apart in the stew and thicken it too much.
  • Mash a few pieces of squash into the broth. It thickens the stew without flour.
  • Use dried beans if you prefer them. Soak them, cook them until tender first, and use their cooking water in place of some of the stock.

  • An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.
