Tofu and Cabbage Stir-Fry
Crisp-fried tofu cubes tossed with shredded cabbage, carrot, garlic and ginger in a light low-sodium soy sauce. Three servings in 27 minutes.

How to Cook Tofu and Cabbage Stir-Fry

Wrap the tofu in a clean tea towel, set a plate and a heavy tin on top and press for 15 minutes. Cut it into 2 cm cubes.

Stir the soy sauce, vinegar, cornflour and water together in a small bowl.

Heat half the oil in a wok over medium-high heat and fry the tofu for 6 minutes, until golden. Lift it onto a plate.

Add the remaining oil, cabbage and carrot to the wok and stir-fry for 4 minutes. Add the garlic and ginger for 30 seconds, return the tofu, pour in the sauce and toss for 1 minute. Drizzle with the sesame oil.

- Dry the cabbage after washing it; wet leaves steam instead of sear.
- Cut the tofu into the same size cubes so that they brown together.
- If the pan looks crowded, cook the cabbage in two batches.
Changing the Recipe
- A quarter-teaspoon of ground ginger per tablespoon of fresh is the standard ratio if you are working from the spice rack rather than a fresh root.
- An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.

Tofu in a stir-fry often falls apart or turns soggy. Be patient. The fix has three parts: press it, fry it first, and leave it alone until a crust forms, and after that the cubes hold their shape when the cabbage and sauce go in.
Cabbage cooks in about 4 minutes if it is shredded finely. Shred it thin and keep the pan hot, so that it wilts and chars instead of stewing. Carrot adds sweetness and colour. The sauce is low-sodium soy sauce, rice vinegar, cornflour and water, and it is just enough to glaze. Stir quickly, and serve before the cabbage loses its bite.
Tofu brings the protein, and cabbage brings bulk without much potassium or sodium. A single tablespoon of soy sauce serves three. Serve over white rice, which keeps the plate light in phosphorus compared with brown rice. Leftovers keep a day and reheat in a hot pan.
