-
Char the aubergines whole under a hot grill for about 10 minutes, turning, until the skin blackens and the flesh is soft. Peel off the skin, leaving the stem on.
-
Flatten each aubergine gently with a fork. Beat the eggs with the salt and pepper in a shallow dish.
-
Heat the oil in a frying pan. Dip each aubergine in the egg, coating both sides.
-
Fry for 3 minutes on each side until golden. Serve with the ketchup.
Worth Knowing
- Char the skin properly before peeling.
- Leave the stem on to flip the aubergine more easily.
- Flatten the flesh gently so it holds together.
- Use thin, long aubergines when you can, as they cook through faster.
Behind the Recipe
Tortang talong means aubergine omelette in Filipino, and the name is the recipe. A whole aubergine is cooked until the skin chars and the flesh turns soft, then flattened with a fork, dipped in egg and fried.
Charring does the work. Cook the aubergines whole over a gas flame, under a hot grill or in a dry pan until the skin blackens and the flesh collapses. Peel off the skin while it is still warm, leaving the stem for a handle. Keep the stem on. It makes the aubergine easy to flip.
Flatten the flesh gently with a fork. Dip it in the beaten egg so it is coated on both sides, then lower it into the hot oil.
Fry for about 3 minutes a side until golden. Serve with rice and banana ketchup or plain tomato ketchup. A squeeze of lime does no harm. Eat it hot, with plenty of rice. The soft, smoky aubergine and the crisp edge of the egg are at their best straight from the pan.
