  1. Mix the flour, yeast, sugar and salt in a bowl. Add the water and 2 tablespoons of oil and mix to a soft dough. Knead on a lightly floured surface for 8 minutes, until smooth and springy.

  2. Put the dough in an oiled bowl, cover, and leave in a warm place for 1 hour, until doubled in size.

  3. Knock the air out of the dough and divide it into 12 pieces. Flatten each into a disc about 8 cm across and 1 cm thick.

  4. Heat 2 tablespoons of oil in a large frying pan over medium heat. Fry the toutons in batches for 3 to 4 minutes per side, until deep golden and puffed, adding more oil as the pan dries.

  5. Split them open while hot and pour over the molasses. Eat at once.
