What Can Go Wrong

  1. Keep the bacon fat.
  2. Toss the noodles while hot.
  3. Leave the cheese in lumps.

A Little Background

Fry the bacon until crisp, and do not drain the fat. That is the short rule for túrós csusza, the Hungarian noodle dish with cottage cheese, because the bacon fat is what coats the noodles and carries the flavour. It is a national favourite, cheap, quick and hearty, and a plate of it takes no more than half an hour.

Use wide egg noodles, or tagliatelle, and boil them in salted water until tender. Cut the bacon into small cubes and fry over medium heat for 8 minutes until deeply crisp and the fat has run clear. Toss the hot, drained noodles in the bacon and fat at once, so each strand takes up the flavour. Turn off the heat.

Crumble in the cottage cheese or curd cheese, in large lumps, and add a spoonful of soured cream. Toss gently, so the cheese stays chunky and does not melt into a paste. Taste for salt and add black pepper. Serve at once on warm plates with an extra spoonful of soured cream and a few pieces of the crisp bacon on top. Some like a sprinkle of dill.
