About This Recipe
The name is a joke that stuck: "rolled eggs" said quickly sounds like a famous watch. In Uganda, a rolex is a chapati wrapped around an egg omelette, and it is the best quick breakfast in Kampala, made in front of you at a stall on the street corner for less than the price of a bus fare.
The omelette is where the skill lies. Eggs are beaten with finely chopped tomato, onion, cabbage and a pinch of salt, and a little pepper. Poured into a hot oiled pan, it should set in 1 to 2 minutes into a thin sheet. Spread the mixture thin so it sets quickly. A thick omelette is too heavy to roll.
The chapati can be homemade or bought. A good chapati is soft and layered; a flour tortilla is a decent substitute. Warm it in a dry pan for 30 seconds on each side. Lay it over the omelette in the pan so the two stick together while the egg is still slightly wet, then flip the whole thing out and roll it up.
Wrap it in paper or foil, as sold, so it holds its shape. Eat it hot, with a squeeze of chilli sauce if you like.
What to Serve It With
