Why the Method Works
Flour, eggs, cream, chocolate, almonds: it is all there in the zuccotto, a Florentine dessert whose name means little pumpkin, after the shape of its dome. It is a bowl lined with soaked sponge, filled with two creams and chilled until firm.
Line a 1.5 litre bowl with cling film, leaving an overhang. Cut the sponge into wedges and press them against the sides and base, soaking each in a mix of liqueur and water. Leave no gaps between the wedges, or the cream leaks through when it is turned out. Keep some sponge back for the top.
Whip the cream with icing sugar and divide it. Fold chopped chocolate and toasted almonds into one half, and sifted cocoa into the other. Fill the bowl with the plain half first, press the chocolate half in the middle, and cover with the last of the sponge. Chill for at least 6 hours, turn out onto a plate and dust with cocoa and icing sugar.
