  1. Boil the potatoes for 12 minutes until tender, drain and mash roughly. Heat the 1 tbsp of oil in a pan and cook the onion for 5 minutes. Add the garlic, curry powder and cumin for 1 minute.

  2. Stir in the potato, peas and salt. Cool for 10 minutes. Mix the flour with 1 tablespoon of water to a paste.

  3. Cut each pastry sheet in half into two strips. Put a spoonful of filling at one end of a strip, fold into a triangle, folding along the strip, and seal the end with the paste. Make 8 samosas from 4 sheets, covering the rest to keep them soft.

  4. Heat the air fryer to 190°C / 375°F. Brush the samosas with the brushing oil and cook in batches for 12 minutes, turning once, until golden and crisp.
