Making Almond Croissant

  1. Heat the oven to 180°C / 355°F. Warm the syrup sugar and water in a small pan for 2 minutes until dissolved, then cool.

  2. Beat the butter and caster sugar until pale. Beat in the egg, then the ground almonds, flour and almond extract.

  3. Split the croissants lengthways and brush the cut sides with syrup. Spread almond cream inside, close, and spread more on top.

  4. Press on the flaked almonds and bake on a lined tray for 12 minutes until puffed and browned. Dust with icing sugar.

Why the Method Is What It Is

Butter, sugar, an egg, ground almonds: four ingredients make the filling, and a stale croissant is the container. In fact, an almond croissant is the best use for one that has gone dry.

A fresh croissant would collapse under the syrup. A dry one drinks it in and comes back soft inside and crisp outside. Day-old is not a compromise, it is the method.
