Why the Method Is What It Is
Autumn is when avocados come into their best, and so, oddly, is this brownie. The fruit takes the place of butter and gives a dense, silky, fudgy crumb.
Use avocados that are properly ripe and dark, so that the flesh mashes to a smooth cream with no stringy bits. Blend them with the melted chocolate in a food processor for a full minute. Any lumps of avocado will show as green flecks. Blend until nothing is left to see.
Beat in the sugar and eggs, then fold in the flour and cocoa. The batter is thicker than usual brownie batter, and should be spread into the tin with a spatula. A brownie that is much stiffer than this will bake dry.
Bake at 175°C / 345°F for 28 minutes. If your oven runs hot, check at 22 minutes. The top should be set and the middle soft. Cool completely and chill for an hour. The avocado gives a faint green tinge to the crumb but no taste.
