Badrijani Nigvzit
Slices of fried aubergine spread with a garlicky walnut paste, rolled up and topped with pomegranate seeds. A Georgian feast appetiser.
Method

Lay the aubergine slices in a colander, sprinkle with the tablespoon of salt, toss and leave for 30 minutes. Rinse and pat dry with paper towels.

Heat about 1 cm of oil in a large frying pan over medium-high heat. Fry the slices for 2 to 3 minutes per side, until golden and soft. Drain on paper towels and cool.

Blend the walnuts, garlic, coriander, fenugreek, cayenne, vinegar, 4 tablespoons of water and the salt to a thick paste, adding more water a spoonful at a time only if it is too stiff.

Spread a tablespoon of the walnut paste over each aubergine slice and roll it up from the short end.

Arrange the rolls on a plate, cover and chill for at least 1 hour.

Scatter with the pomegranate seeds and coriander and serve cold.
