Method

Drain the soaked beans, cover with fresh water by 5 cm, and boil hard for 10 minutes.

Lower the heat and simmer 60 to 80 minutes until completely tender. Do not salt them yet — salt early keeps the skins tough.

Drain, keeping 400 ml of the cooking liquid.

Cook the onions in the oil over medium heat for 12 minutes until soft and golden.

Add the garlic and cook 1 minute, then return the beans with the reserved liquid.

Simmer 15 minutes, then mash about a third of the beans against the side of the pot with a wooden spoon.

Stir in the ground walnuts and cook 5 minutes — the mixture will thicken noticeably.

Take off the heat and add the vinegar, ground coriander, blue fenugreek, savory, chilli and salt.

Stir in most of the fresh coriander and let it sit 10 minutes for the spices to open up.

Serve hot with the rest of the coriander, sliced red onion, cornbread and pickles.
