Baked Brie

A wheel of Brie wrapped in puff pastry with raspberry jam and toasted pecans, baked until golden and oozing. The party centrepiece that asks very little of the cook.

How to Make Baked Brie

  1. Heat the oven to 200°C / 400°F (180°C / 355°F fan) and line a baking tray with baking paper.

  2. Unroll the pastry on the tray. Set the Brie in the centre and spread the jam over the top of the cheese, then scatter with the nuts and rosemary.

  3. Fold the pastry up over the top of the Brie, gathering it in pleats, and trim off any surplus. Press the seams together firmly to seal them, and turn the parcel over so that the seam is underneath.

  4. Cut some decorations from the trimmings if you like and stick them on with a little of the egg. Brush the whole parcel with the beaten egg.

  5. Bake for 25 to 30 minutes until the pastry is puffed and deep golden brown.

  6. Rest for 10 minutes, then transfer to a board and serve warm with crackers, apple and pear slices.

Tips for Making Baked Brie

  • Keep the rind on. It holds the melting cheese in shape, and it is soft and edible.
  • Seal the pastry very thoroughly and set it seam side down. Any gap lets the cheese escape onto the tray.
  • Rest the Brie for 10 minutes before serving. Straight from the oven the centre is too runny, and it thickens slightly as it rests.
