Where This Goes Wrong

If your oven runs hot, check the thickest fillet at 12 minutes.

Leave the skin on while the salmon bakes; it protects the flesh from drying and lifts off easily afterwards.

Pat the fillets dry before adding the topping so it clings instead of sliding off.

  1. Heat the oven to 200°C / 390°F (180°C / 355°F fan) and line a baking tray with parchment paper. Pat the salmon dry and lay the fillets on the tray, skin side down.

  2. Mix the olive oil, garlic, lemon juice, lemon zest, half the dill, the salt and the pepper in a small bowl and spoon it over the salmon.

  3. Lay the lemon slices on top and bake for 12 to 15 minutes, until the salmon is opaque and flakes easily at the thickest part.

  4. Scatter the remaining dill over the fillets and serve straight from the oven.

What's Going On Here

Take the salmon out of the oven when the middle is only just opaque. It carries on cooking on the tray for a minute or two, and salmon pulled early stays moist, while salmon baked until it is white all through turns dry and chalky. That one habit matters more than any seasoning.

Lemon, dill, garlic and olive oil make the topping, with no butter and no sugar. Thickness sets the timing. Bake for 12 to 15 minutes, and check the thickest fillet first. A thin tail finishes sooner than the rest, so fold the thin end underneath to even things out. Slices of lemon laid on top add flavour as they roast and keep the surface from drying.

Salmon and dill suit each other. Garlic and lemon sharpen the richness of the fish, so it needs no heavy sauce. Serve with roasted asparagus or a big green salad, and flake any leftovers into a salad the next day.
