  1. Whisk the oil, lemon juice, dill, garlic and pepper in a bowl. Add the salmon, onion and zucchini, toss gently and marinate for 10 minutes.

  2. Heat a grill or griddle pan to medium-high and oil it well.

  3. Thread the salmon, zucchini and onion onto 8 skewers, leaving small gaps.

  4. Grill for 8 minutes, turning every 2 minutes, until the salmon is just cooked through and the vegetables have charred edges.

Salmon is delicate, so cut it into cubes of about 3 cm and thread it loosely with zucchini and red onion, which hold the fish upright. Oil the grill well, because salmon sticks. Turn the skewers gently, a quarter turn at a time, and do not move them until they release. Lemon, dill and garlic in the marinade give the flavour.

Marinate for only 10 minutes, because acid turns the flesh opaque and firm if it sits for long. Zucchini cooks in the same time as the fish. It is also one of the lower-potassium vegetables. Serve with rice and a green salad. Thread the onion in thick wedges so that the layers stay together.
