  1. Grind the drained chillies, garlic, ginger, cumin, mustard seeds, peppercorns, cinnamon, cloves, vinegar and turmeric to a smooth paste.

  2. Coat the beef with the paste, cover and refrigerate for 1 hour.

  3. Heat the oil in a heavy pan and cook the onions for 10 minutes until golden. Add the beef with all the paste and cook for 10 minutes, stirring, until the paste darkens.

  4. Add the sugar, salt and water. Cover and simmer over a low heat for 60 minutes.

  5. Add the potatoes and cook for 30 minutes more, until the beef and potatoes are tender and the sauce is thick.

A Few Notes

Wear gloves when grinding the soaked chillies.

For less heat, remove the chilli seeds before soaking.

Refrigerate the curry overnight if you can; the flavours settle and mellow.

Ingredient Swaps

  • Dried chilli flakes can stand in for the chillies. Heat varies a great deal between chillies and between jars, so start with a small pinch and add more to taste.
  • If you only have ground ginger, a quarter-teaspoon for each tablespoon of fresh is the ratio usually given; it tastes warmer and less bright than the fresh root.
  • An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.

Leftovers

Keeps in the fridge for 4 days and freezes for up to 3 months. Reheat gently.
