About This Recipe

Sweet and salty at once: the honey on top of crisp, salted aubergine is the combination that people remember from a first trip to Cordoba or Granada. Berenjenas con miel is a tapas bar standard, and the right way to make it is to keep the aubergine thin and the batter thinner.

Cut the aubergine into batons, about 1 cm thick and 7 cm long. Salt them well and leave in a colander for 20 minutes to draw out the bitter juices, then pat dry. Soak in milk for 10 minutes if you want a milder taste. The aubergine must be dry before it is coated. Wet pieces make the coating slide off.

The coating is only flour, seasoned with salt. Some cooks use a light batter of flour, sparkling water and a pinch of salt. Dredge the batons in flour, shake off the excess, and cook in 2 cm of hot olive oil at 180°C / 355°F for 3 minutes, until golden and crisp. Drain on kitchen paper.

Pile on a plate and drizzle with miel de caña, the dark sugarcane molasses of Andalusia. Ordinary honey, warmed until runny, works well too. Serve at once, with a cold fino sherry.
