  1. Dry the puffed rice in a low oven for 5 minutes if it is at all soft, and cool it.

  2. Have every other ingredient chopped and within reach before you start.

  3. Put the puffed rice in a large bowl.

  4. Add the potato, onion, tomato and crushed papdi.

  5. Spoon in both chutneys, the chaat masala, chilli powder and black salt.

  6. Toss hard with two spoons for 15 seconds, until everything is coated.

  7. Fold through half the sev and the coriander.

  8. Pile into bowls, scatter the remaining sev over and serve with lemon wedges.

  9. Eat within 2 minutes.

What Can Go Wrong

  1. Everything ready before the chutney touches the rice.
  2. Fifteen seconds of tossing, then straight into bowls.
  3. Refresh soft puffed rice in a low oven first.

The Short Version

Everything is prepared separately and combined in the last thirty seconds. Half the sev is folded in for flavour in every bite; the other half is saved for on top, so at least some of it is still crisp by the time it is eaten. Puffed rice is hygroscopic to a degree that has to be seen: chutney-dressed bhel is crisp when you toss it and soggy by the time it reaches the table if you dawdle. Toss, plate, hand it over, eat.
