Bircher Muesli
Oats soaked overnight in apple juice and yoghurt, with grated apple folded through in the morning. The original, from a Swiss doctor in 1900, and still better than granola.

The night before, mix the oats, apple juice, yoghurt, half the lemon juice, the salt, honey and raisins in a bowl.

Cover and refrigerate at least 8 hours. It will thicken considerably.

In the morning, coarsely grate the apples — skin on — and toss them immediately in the remaining lemon juice to stop them browning.

Fold the grated apple and most of the hazelnuts through the soaked oats.

If it has set too stiff, loosen with a splash of apple juice or milk until it drops from the spoon.

Spoon into bowls, top with more yoghurt, the berries, the remaining hazelnuts and a dusting of cinnamon.
