-
Heat the oil in a wok or large frying pan over a high heat. Add the garlic for 10 seconds.
-
Add the bok choy cut-side down and cook for 1 minute until lightly coloured.
-
Add the soy sauce, water and sugar. Cover and cook for 1 minute until the stems are tender.
-
Uncover, toss for 30 seconds and finish with the sesame oil.
Notes for Getting It Right
- Wash the bok choy well and dry it.
- Do not let the garlic brown.
- Serve it right away, while the stems are crisp.
- Use baby bok choy whole if you can find it.
If You're Missing Something
- An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.
What to Serve with Bok Choy with Garlic

- Braised pork
Leftovers and Storage
Best eaten straight away. It goes soft and watery in the fridge.
What's in a Serving
Per serving, calculated from the ingredient list with USDA FoodData Central figures (SR Legacy). A calculation, not a laboratory analysis: brands, cuts and how you measure change the real numbers. How the figures are worked out.
