  1. Put the potatoes in a large frying pan with 50 ml of water. Cover and cook over medium heat for 8 minutes until nearly tender. Drain off any water.

  2. Add the oil and sausage and cook for 8 minutes, uncovered, until the potatoes are crisp and the sausage is browned.

  3. Add the onion, pepper, garlic, paprika and salt and cook for 4 minutes.

  4. Make 4 wells in the mixture. Crack an egg into each, cover and cook for 5 minutes until the whites are set.

  5. Scatter with the cheddar and chives and serve from the pan.

Notes From the Method

Part-cook the potatoes before frying.

Cover the pan to set the egg whites.

Take it off the heat when the yolks still wobble.

If You're Missing Something

  • An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.

Keeping What's Left

Best eaten at once. The potato mix keeps for 2 days; cook fresh eggs when serving.
