Method

  1. Put the condensed milk, sifted cocoa, butter and salt in a heavy non-stick pan.

  2. Cook over a low heat, stirring constantly with a wooden spoon, for 12 minutes.

  3. Scrape the base and the corners the whole time so nothing catches.

  4. Test it: drag the spoon across the base. When the mixture parts and stays parted for 2 seconds, it is done.

  5. Scrape onto a buttered plate and spread it out.

  6. Cool completely at room temperature, about 1 hour. Do not refrigerate.

  7. Butter your hands lightly.

  8. Take teaspoons of the mixture and roll into balls between your palms.

  9. Roll each ball in the sprinkles until completely coated.

  10. Set in small paper cases and serve at room temperature.
