What's Going On Here
Split the croissant only three-quarters of the way through, and the filling stays put. That is the single most useful tip for this breakfast.
A shop-bought croissant, a little ham and some cheese is all it takes, but the order matters. Spread the mustard on the inside of the top half, where it will not make the base damp. Put the cheese on the ham, not under it. The cheese melts into the folds and glues the sandwich together.
Wrap the filled croissants loosely in foil, which keeps the flaky top from burning while the middle warms.
Heat at 180°C for 8 minutes, then open the foil for the last 2 minutes if you want the crust crisp. If your oven runs hot, check at 6 minutes. Let them cool for 1 minute before eating. A handful of rocket tucked in after baking adds a fresh, peppery bite against the melted cheese.
