Mix the chicken, grated onion, garlic, parsley, paprika and pepper in a bowl until just combined.

Shape into 4 patties about 11 cm across and press a shallow dimple into the centre of each.

Heat the oil in a large frying pan over medium heat. Cook the patties for 6 minutes a side, until golden and the centres reach 74°C / 165°F.

Toast the buns in the pan for 30 seconds. Fill with the lettuce, patties, red onion and cucumber and spread with the mustard.

Press a shallow dimple into the centre of each patty. It stops the burger puffing into a dome as it cooks, so it stays flat enough for the bun. A thumb is all you need.
Chicken mince is lean, so the burger needs help to stay moist, and grated onion adds water and a little sweetness while it disappears into the patty. Do not overwork the mixture. Shape it gently and chill the patties if you have time, because cold patties hold their shape better in the pan and cook more evenly all the way through.
