Season the chicken with the salt and pepper.

Heat the oil in a large casserole over medium-high heat and brown the thighs, skin side down first, for 10 minutes in total. Lift them out.

Pour off all but 1 tbsp of the fat, add the butter and fry the mushrooms for 6 minutes, until golden and dry.

Add the shallots and garlic and cook for 2 minutes, then stir in the flour for 1 minute.

Pour in the wine and let it bubble for 3 minutes, scraping the base of the pan.

Add the tomatoes, purée and stock and bring to a simmer.

Return the chicken to the pan, cover, and simmer over low heat for 35 minutes, until the chicken is tender and cooked through.

Lift the lid for the last 10 minutes if the sauce needs thickening, then stir in the tarragon and parsley and serve.
