-
Mix 2 tbsp of the oil with the lemon juice, garlic, oregano, thyme and 1 tsp of the salt. Coat the chicken and marinate for at least 30 minutes.
-
Heat the oven to 220°C / 430°F. Toss the peppers and beans with the remaining oil and salt on a tray and roast for 20 minutes.
-
Simmer the quinoa in the stock for 12 minutes, cover and rest for 5 minutes, then fluff.
-
Cook the chicken in a hot griddle pan for 5 minutes per side until a thermometer reads 74°C / 165°F. Rest, then slice.
-
Cool for 15 minutes, divide the quinoa, vegetables and chicken between 4 containers and top each with tahini sauce.
Worth Knowing
- Salt the chicken ahead for a juicier result.
- Cook the chicken to 74°C / 165°F and no further.
- Spread the rice out so it cools within an hour, then seal the lids and refrigerate.
Why the Method Is What It Is
Salt the chicken the night before. This is the single most useful trick for meal prep chicken, because breast meat that has sat with salt for a few hours stays juicier through cooking and reheating than meat seasoned at the last minute. It also tastes more seasoned, even cold.
Slice the breasts in half horizontally so that they cook evenly, then marinate in lemon juice, olive oil, garlic, oregano and thyme. The acid works fast on thin cutlets, so 30 minutes to a few hours is plenty. Grill or pan fry them over medium-high heat for 5 minutes a side, until a thermometer reads 74°C / 165°F, and no longer. Overcooked chicken goes tough in the microwave.
Cook the quinoa in stock, not water. The extra flavour carries through the week. Rinse it first to remove bitterness, simmer for 12 minutes, rest it covered for 5, and fluff. The roasted peppers and green beans go on one tray at 220°C / 430°F for 20 minutes.
Let everything cool for 15 minutes before dividing into containers, then slice the chicken so each box has a fan of pieces on top. A drizzle of tahini or yogurt sauce added at serving time brings the bowl back to life.
What to Put Next to It
Hummus · Cherry tomatoes · Cucumber · Fresh fruit
Common Substitutions & Variations
- An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.
- Fresh herbs work in place of the dried oregano at roughly three times the quantity — a teaspoon of dried is about a tablespoon of fresh, chopped.
