How to Make Greek Chicken Bowls

  1. Mix 2 tablespoons of the oil with the 3 tablespoons of lemon juice, the crushed garlic, oregano, salt and pepper in a bowl. Add the chicken, turn to coat and marinate for 30 minutes.

  2. Meanwhile, cook the quinoa or rice according to the packet instructions, then fluff with a fork and leave to cool slightly.

  3. To make the tzatziki, stir the yoghurt with the grated cucumber, grated garlic, dill and the teaspoon of lemon juice, and season with a pinch of salt.

  4. Heat the remaining oil in a large frying pan or griddle over medium-high heat. Cook the chicken for 6 to 7 minutes on each side until golden and cooked through, with a thermometer reading 75°C / 165°F.

  5. Transfer to a board, rest for 5 minutes, then slice.

  6. Divide the quinoa between 4 bowls and arrange the chicken, cucumber, tomatoes, onion, olives and feta over it.

  7. Add a big spoonful of tzatziki to each bowl, scatter with parsley and serve.

  • Marinate for no more than a couple of hours. The lemon juice starts to cook the surface of the chicken, and it turns chalky if left too long.
  • For meal prep, keep the tzatziki and vegetables in separate containers and assemble at the last minute.

Common Substitutions & Variations

  • An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.
  • Fresh herbs work in place of the dried oregano at roughly three times the quantity — a teaspoon of dried is about a tablespoon of fresh, chopped.
