-
Put the water, salt, bay leaf, peppercorns, garlic, lemon and parsley in a wide pan and bring to a boil. Lower in the chicken, making sure it is covered by the liquid.
-
Bring back to a gentle simmer, cover, turn off the heat and leave for 15 minutes without lifting the lid.
-
Cut into the thickest piece to check that it is white all the way through with no pink. If it is not, return it to the hot liquid for 3 minutes.
-
Lift out the chicken, rest it for 5 minutes, then slice or shred.
Things to Watch For
- Use a pan wide enough for the chicken to lie in one layer, so it cooks evenly.
- If the breasts are very thick, halve them horizontally before poaching.
- Strain and keep the liquid; it freezes well as a light stock.
If You're Missing Something
- An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.
About This Recipe
Good poached chicken is white all the way through, springy under the finger and cuts in moist slices. It is not pale and rubbery. The difference is the heat: the water is brought to a boil, then the pot is covered and taken off the heat, so the chicken cooks gently in the cooling liquid.
This is the easiest way to make chicken for salads, sandwiches and bowls, and it asks for nothing but a pot. Keep the lid on for the full 15 minutes. Do not lift the lid. Escaping heat is what leaves the centre underdone. Bay, garlic, lemon, peppercorns and parsley stems flavour the meat lightly, and half a teaspoon of salt seasons it through. Check the thickest piece, and return it to the liquid if it is not done.
Save the cooking liquid. It is a light chicken broth, good for soups or for cooking grains. Keep the chicken in some of the liquid in the fridge and it stays moist for 3 days. Slice it across the grain.
