Cherry Clafoutis
A Limousin dessert somewhere between a flan and a pancake: cherries dropped into a loose batter and baked until it puffs and sets around them. Traditionally the stones are left in, and there is a good reason for it.

Heat the oven to 180°C / 350°F. Butter a 26 cm ceramic dish heavily and dust it with the tablespoon of sugar, tapping out the excess.

Scatter the cherries over the base in a single layer. Do not pack them in tightly — they need batter around them.

Whisk the eggs and sugar for 2 minutes until pale and slightly thickened.

Whisk in the flour and salt until smooth, then the milk, cream, melted butter, vanilla and kirsch. The batter will be very loose, like single cream.

Rest the batter 15 minutes, then pour it gently over the cherries.

Bake for 40 to 45 minutes until puffed, deeply golden at the edges and set with only the faintest wobble at the centre.

Let it settle for 15 minutes — it will sink, which is correct — then dust with icing sugar and serve warm.
