-
Heat the oven to 160°C / 320°F.
-
Mix the sugar, paprika, salt, pepper, garlic powder, onion powder, mustard powder and cayenne, and rub it all over the ribs.
-
Spread the onion over the base of a deep baking dish, add the apple juice and lay the ribs on top in a single layer.
-
Cover the dish tightly with foil and cook for 2 hours 15 minutes, until the meat is very tender when pierced with a fork.
-
Raise the oven to 210°C / 410°F. Uncover the dish and pour off most of the liquid.
-
Brush the ribs generously with barbecue sauce and roast for 15 minutes, until the glaze is bubbling.
-
Brush with more sauce and roast for 10 minutes more, until sticky and caramelised at the edges. Rest for 5 minutes before serving.
Tips for Making Country-Style Ribs
- Keep the foil tight. If steam escapes, the ribs dry out on top and need longer, and the tender result is what the covered cook is for.
- Add the sauce at the end, not the beginning. Barbecue sauce is full of sugar and it scorches and turns bitter over hours in the oven.
- Save the liquid from the dish. Skim the fat, boil it down for 5 minutes and spoon it over the ribs as a light sauce.
