Crispy Baked Chicken Thighs
Bone-in, skin-on thighs dry-brined with salt and baking powder, then roasted on a rack in a hot oven until the skin is glassy and crisp and the meat is juicy.

Pat the thighs very dry with paper towels. Mix the salt, baking powder, paprika, garlic powder and pepper and rub the mixture all over the thighs, including under the skin where you can.

Arrange the thighs skin side up on a wire rack set over a large baking tray and leave them uncovered in the fridge for 1 hour so that the skin dries out.

Heat the oven to 220°C / 425°F. Brush the skin lightly with the olive oil.

Roast the thighs on the rack, skin side up, for 40 to 45 minutes, until the skin is deep golden and crisp and the meat reads at least 80°C in the thickest part.

Rest for 5 minutes, then serve with the lemon wedges and parsley.
