Heat the oven to 220°C / 430°F (200°C / 390°F fan). Toss the Brussels sprouts and onion with half the oil, half the salt and half the pepper on a large baking tray and spread them out.

Mix the mustard, thyme, garlic powder, the remaining oil, salt and pepper in a bowl. Add the chicken and turn to coat.

Push the vegetables to the edges of the tray and lay the chicken in the middle. Roast for 25 to 30 minutes, turning the sprouts once, until the chicken is cooked through and the sprouts are browned and tender.

Serve with the lemon wedges.
