Lemon Herb Chicken Thighs: Step by Step

  1. Juice one lemon and cut the second into halves. Mix the juice with the oil, garlic, oregano, thyme, salt and pepper.

  2. Turn the chicken in the marinade, cover and leave for 30 minutes at room temperature or up to 4 hours in the fridge.

  3. Heat the oven to 210°C / 410°F (190°C / 375°F fan). Lift the chicken out, pat dry and arrange skin side up on a tray with the lemon halves.

  4. Roast for 40 minutes until the skin is deep golden and the juices run clear. Squeeze the roasted lemon over before serving.

Why does lemon chicken so often taste of nothing? Because the juice goes on at the end and the acid never reaches the meat. Marinating for even 30 minutes fixes that.

The marinade is lemon juice, oil, garlic and dried herbs. The acid loosens the surface of the meat and carries the garlic into it, so the flavour goes right through and does not just sit on the skin.

Do not marinate longer than 4 hours. Lemon juice starts to turn the surface of the chicken mushy if it sits overnight.

Lift the chicken out of the marinade and pat it dry before roasting. Wet skin steams and will not crisp. Roast skin side up at a high heat, and leave the lemon halves on the tray to caramelise. Dried herbs are fine here, since they are rehydrated by the marinade and the heat. The roasted lemon halves can be squeezed over the cooked chicken for a mellow, caramelised juice that tastes different from the raw.
