Why It Works
How do you roast a crown? Ask the butcher. A crown roast is made from two racks of pork, each with eight ribs, that the butcher has trimmed of fat and bent into a circle and tied, so you can ask for it ready to cook. All that remains is to season it, stuff the centre and roast it.
The stuffing is sage, onion, celery and apple cooked in butter, then mixed with bread cubes and stock. Pile it loosely into the centre, as it will swell. Wrap the tips of the bones in foil, so they do not burn and look tidy. Rub the pork all over with salt, pepper and oil.
Start the oven hot at 220°C / 430°F for 20 minutes to colour the meat, then lower it to 160°C / 320°F for the remaining 100. The roast is ready when the thickest part of the meat reaches 70°C / 158°F. Rest it for 20 minutes, loosely covered. Carve between the bones into chops, serving each with a scoop of stuffing and the pan gravy.
