Curtido
Salvadoran lightly fermented cabbage slaw with carrot, onion and oregano — the sharp, crunchy thing served with every pupusa.

Method

Put the shredded cabbage in a large heatproof bowl and pour a kettle of boiling water over it. Count to thirty, then drain immediately in a colander.

Press out the excess water and return the cabbage to the bowl.

Add the carrot, onion, oregano and chilli flakes and mix.

Warm the vinegar, water, salt and sugar with the bay leaves until the salt dissolves. Do not boil.

Pour the warm brine over the vegetables and press them under with a plate.

Cover with a cloth and leave at room temperature for 24 hours, then refrigerate.

It is ready to eat after the day out, and better after three in the fridge.
