  1. Knead the flour, baking powder, salt, 1 tbsp oil and warm water into a smooth dough. Cover and rest for 30 minutes.

  2. Boil the split peas with the turmeric in the water for 25 minutes until just tender. Drain thoroughly and grind with the cumin, garlic and salt to a coarse dry crumb.

  3. Divide the dough into 6 balls. Flatten each, add 2 tablespoons of filling, pinch closed and flatten again. Roll gently to 20 cm.

  4. Cook on a hot dry griddle for 1 minute on one side. Flip, brush with oil and cook for 1 minute more. Clap between your hands and wrap in a cloth.

Small Things That Help

  • Dry the split peas thoroughly after boiling.
  • Roll gently so the filling does not break through.
  • Keep wrapped to stay soft.

Ingredient Swaps

  • An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.

Serving Suggestions

  • Curry chicken
  • Channa and aloo
  • Pumpkin curry
  • Pepper sauce

Keeping and Reheating

Best eaten fresh. Keeps wrapped for 1 day and reheats on a griddle.
