The Method for Eggplant Lasagna

Tap a step to highlight it, or turn on Cook Mode for large type and step-by-step focus.

  1. Salt the aubergine slices and leave on a rack for 30 minutes. Pat dry. Heat the oven to 220°C / 430°F, brush the slices with the oil and roast on trays for 20 minutes, turning once.

  2. While the aubergine roasts, simmer the tomatoes, garlic and oregano for 20 minutes until thick.

  3. Mix the ricotta, egg, half the parmesan and the parsley. Reduce the oven to 190°C / 375°F.

  4. Spread a little sauce in a baking dish. Layer aubergine, sauce, ricotta mix and mozzarella, repeating twice and finishing with sauce, mozzarella and the remaining parmesan.

  5. Bake for 50 minutes until bubbling and golden. Rest for 15 minutes and scatter with basil.

What Can Go Wrong

  1. Salt and dry the aubergine slices.
  2. Keep the tomato sauce thick.
  3. Rest the lasagna before cutting.

Common Substitutions & Variations

  • An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.
  • Fresh herbs work in place of the dried oregano at roughly three times the quantity — a teaspoon of dried is about a tablespoon of fresh, chopped.

A Little Background

Salt the slices and leave them for half an hour. That one step is what separates a lasagna with firm layers from one that collapses into a watery mess, because aubergine holds a surprising amount of liquid, and it will all end up in the dish unless you draw it out first.

Slice the aubergines lengthways into planks about 1 cm thick. Sprinkle with salt, leave them on a rack, and pat them dry with kitchen paper. Brush them with olive oil and roast on trays at 220°C / 430°F for 20 minutes, turning once, until golden and pliable. Roasted slices absorb far less oil than fried ones.

Make the tomato sauce thick. A sauce that is loose in the pan becomes soup in the oven, since the aubergine continues to release a little moisture as it bakes. Simmer the tomatoes with garlic and basil for 20 minutes, until a spoon drawn through leaves a clear trail.

Mix the ricotta with egg, parmesan and parsley for the middle layer. The egg sets it so it cuts cleanly. Rest the baked lasagna for 15 minutes before slicing, or the layers slide apart.
