-
Tip the beans and their liquid into a pan and heat gently for 5 minutes.
-
Mash about two thirds of the beans against the side of the pan. Stir in the garlic, cumin, lemon juice, half the oil and the salt.
-
Warm the pittas in a dry pan for 1 minute on each side and split them open.
-
Fill with the beans, tomatoes and parsley and drizzle with the rest of the oil.
Worth Knowing
- Mash only part of the beans for texture.
- Taste before serving and adjust the lemon and salt.
- Warm the pitta so it folds without cracking.
- Add a pinch of chilli flakes for heat.
Some Background
Warm the beans and mash them roughly. That is the single most useful instruction for this sandwich, because it turns tinned fava beans from firm and bland into something creamy and rich enough to fill a pitta.
Tinned fava beans, also sold as ful medames, are cheap and already cooked. Drain them, tip them into a pan with a splash of the liquid and heat gently. Mash about two thirds against the side of the pan and leave the rest whole. Season at the end. Garlic, cumin, lemon and salt all vary in strength, and tasting is the only reliable guide.
Olive oil stirred in at the end gives a glossy finish. Chopped tomato and parsley add freshness and a little acidity.
Split the pitta and warm it in a dry pan, then spoon in the beans while they are hot. The bread should be soft, with the filling steaming inside.
Good Alongside
Pickled turnips · Green salad · Boiled eggs · Mint tea
Changing the Recipe
- An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.
