Feijoa Cake
A moist butter cake with chopped feijoa folded through it and a cinnamon-sugar top. The New Zealand answer to the autumn feijoa glut.

Heat the oven to 180°C / 350°F and grease and line a 20 cm round cake tin.

Cut the feijoas in half and scoop the flesh out with a spoon. Chop it into small pieces.

Beat the butter and sugar for 4 minutes, until pale and fluffy. Beat in the eggs one at a time, then the vanilla.

Fold in the flour and baking powder alternately with the milk, then gently fold in the feijoa.

Spoon into the tin and level the top. Mix the tablespoon of sugar with the cinnamon and sprinkle over.

Bake for 40 to 45 minutes, until golden and a skewer comes out clean.

Cool in the tin for 10 minutes, then turn out onto a wire rack.
