  1. Put the gin, lemon juice and sugar syrup in a cocktail shaker with a handful of ice and shake hard for 10 seconds, until the outside is frosted.

  2. Strain into a chilled champagne flute.

  3. Top slowly with the sparkling wine, pouring it down the inside of the glass to keep the bubbles.

  4. Twist the lemon peel over the glass to release its oils, and drop it in or curl it on the rim.
