Flour, egg, milk, chives: four things, a clear broth and a plate of pancakes cut into ribbons. Frittatensuppe is the Austrian pancake soup, and the pancakes are the point: thin, tender, flecked with green and rolled into noodle shaped strips.

The batter is more liquid than a normal pancake batter, which makes the frittaten delicate. Whisk the flour with the milk and eggs until smooth, stir in chives and a pinch of nutmeg, and let it stand for 10 minutes. Pour only a thin layer into the pan, so that each pancake is paper thin. Cook for 1 minute on each side in a little butter, until set and pale gold with a few brown flecks.

Stack the cooked pancakes, roll them up and cut across into strips about 5 mm wide. Unroll the strips into warm bowls and ladle the hot broth over them at the table. If you add them to the pot too early they turn soggy and cloud the soup. A good broth makes the dish, and the rindsuppe of the Viennese kitchen is the natural base.

  1. Whisk the flour, milk, eggs, salt and nutmeg until smooth. Stir in half the chives. Stand for 10 minutes.

  2. Melt a little butter in a 22 cm pan and pour in a thin layer of batter. Cook for 1 minute on each side. Repeat to make 6 pancakes.

  3. Roll up the pancakes and cut across into 5 mm strips.

  4. Divide the strips between 4 warm bowls, ladle over the hot broth and scatter with the remaining chives.
